How exactly does this work? We've eaten at lots of places with a "B" grade, and I joked that if my place had a "C" I just wouldn't post the sign...it does seem that lots of places don't have the grade sign. Then we found a little noodle shop with a "C". Does anyone know what the criteria are for the various grades? Given that we've yet to see an "A", (and we've seen B's that look absolutely spotless and one with a cockroach on the floor) we think it might be something like a closed door and no self-service like with a condiment bar. If a place gets less than C, are they shut down? Or just don't get the green sign?
The grading probably depends on how much cash is paid to the inspector.
Most restaurants don't seem to have signs. I did see an "A" posted at a hotel restaurant. I got a peek into the kitchen through the window and it was disgustingly dirty.
Fatter red envelope, better grade. I think the KFC on Yuantong BeiLu has an A.

Given that many Chinese business forge a lot of documents and certifications, I wouldn't pay much attention to these so-called 'rating' certification. There are too many that can 'buy' off an 'A' grade. It's all about the guanxi.

I don't doubt you buy the A grade, but too many? I have seen like one A restaurant.
