Hehe I can recognize the French guy ;) I have to admit that a good baba rhum ( I also don't know if have a English name ) can be very nice. Maybe a baba baijiu as the rhum will be very expansive ^^

just one consideration:
In China you cannot get imported flours anymore.
Big groups like Sinodis provide mix flours, also "sour dough flours" + recipes.
Anybody can reach high level quality standard results, now.
You should be one of the first western good bakery in Kmg (but maybe I wrong, I'm not based there).

There is actually a French pastry chef on the south side. I don't think he does bread though. His specialty is cakes.
In Thailand we used Chinese flour.
I don't want imported flour. I use local product as possible. Make bread with Chinese flour is possible. As sour dough is possible too.
Just the way how to work it is a little different.
About you say anybody can get high quality now is the same as the bread machine in Europe. Every body can make bread. Can they make really good one? Not so good.
Every body can cook, and find all the recipes as you want on Internet but still have restaurant?

@mmkunmingteacher I have a baijiu cake can surprise you ;) I create it when I was in Chengdu and every body was surprise by it. Without try we don't know.
I don't want only make foreigner product but also want to create new product for Chinese people. Use my knowledge but the food they like.
I suppose good gluten-free baked goods would be out of the question, eh? :)
