About gluten free I was thinking at that because most of Chinese people won't eat sourdough bread because of the PH. Maybe is one solution but I have to search about the flour I will find in kunming

I don't want only make foreigner product but also want to create new product for Chinese people. Use my knowledge but the food they like.

I don't want imported flour. I use local product as possible. Make bread with Chinese flour is possible. As sour dough is possible too.
Just the way how to work it is a little different.
About you say anybody can get high quality now is the same as the bread machine in Europe. Every body can make bread. Can they make really good one? Not so good.
Every body can cook, and find all the recipes as you want on Internet but still have restaurant?
Every body can paint do every body become a painter?
