Easy Chinese Meals??

I just arrived in China and I absolutely LOVE eating the egg and tomato dish. What are some other dishes that are pretty easy to make at home. I want to eat at home as much as possible to save on money but I'm not sure what to cook here! What are your favorite dishes and how do you make them?

Stir-fry some pork, garlic, onions, chili peppers, and any assorted Chinese vegetables. Or instead of pork, use goat cheese or tofu. I do this almost every night. Throw in a little sesame oil and ginger, and a dash of soy sauce, for an "Asian" flavor.

Pork and Green Chilies over Rice

Get 300-350 mg of pork cut into small bite sized pieces. My local supermarket sells precut up pork which works nicely. Get six to eight green chilies. I like the lighter green, smooth ones about 20 cm long. You need some oil, soy sauce, vinegar and some spices. I use a spicy soy sauce and will toss in cumin小茴香or lajiao fenfen辣椒粉粉, some salt, pepper, curry depending on how I feel. Maybe add garlic if I have it.

Prepare/start the rice ahead of time. I use Thai rice, from Thailand. Thai rice is long grain rice and is drier than other types. In the US I used Texas Long Grain. Imported Thai rice is expensive, 8-10 yuan per KG. However, it is less likely to be cadmium enriched, I hope.

Prepare the chilies by removing the seeds and, not spicy - remove the white part the seeds are attached to. If you like it spicy just remove the seeds. Cut up the chilies on the bias about 2-4 mm wide. Brown the pork splashing the meat with soy sauce. Before the meat finished, about half cooked, toss in cutup chilies. Add whatever spices you like and splash in vinegar. Remember you are stir frying so keep tossing the pork and chilies until done.

Cost is about 15-18 yuan and with enough rice, I get three meals.
