I picked up a massive horseradish from the local market the other day with the brazen idea of pickling them like the lovely 泡菜 I sometimes get along with my food. The ones I mean mostly come as little pink cubes and taste spicy and tangy.
Once home I realised I had no idea how to do it.
I could buy a big jar and I'll probably need clear vinegar. Chillies and salt? Water? Anyone have a solid recipe on how to do this? The internet isn't being very helpful or I just don't know where to look.

Now if you want the pink cubes, I think it's best to ask your favorite restaurant how they do it. Pretty sure each makes their own. This might take the fun out of it, but they might do it for you haha.
I lived in Kunming for 4 years, and I think the pink cubes that you mean is pickled daikon radish 萝卜 (luo bo), the main ingredients is the white daikon radish, and the mixture of the pickling ingredients are just plain clear vinegar and sugar, the spicy-ness comes from added chili. While the color I think it is food coloring. Just mix the peeled and cut radishes (size you desire) in the mixture of vinegar and sugar (don't add water) in a seal-able container. Sourness and sweetness as desired, then just keep stirring them with spoon until the radish lets out their natural juice, then just leave them soaking for a day or two, so the radish have time to absorb the flavor....... there's a variant of this by cutting daikon radish and carrot in long thin strips, the carrot gives another extra flavor.
