Lots of old-school Kunming restaurants serve spring rolls. In Guizhou, fresh (not fried) spring rolls are a big-time street snack.

The spring rolls in Xiamen are amazing. They are steamed, full of a variety of local seafood, and weigh at least 200g.
the vietnamese spring rolls she made were fried, but i think there may be steamed varieties as well in vietnam.
there was a Dai restaurant in kunming that had spring rolls...also fried.
maybe someone can update the thread with a review of the tacos at paul's.
